Years ago, food additives were used to preserve food. Salting and smoking helped early cultures protect and extend their food supplies through lean times. Today, food additives have developed a lot further. We still use salt and vinegar to preserve food, but we are able to use food additives to enrich and fortify our foods and drinks as well. Food additives are widely used in culinary applications to improve the taste, texture, and appearance of foods. Some commonly used culinary food additives are: sorbitol, citric acid, MSG, fructose to improve the taste; maltodextrin, baking soda, agar, gelatin to improve texture; and calcium hydroxide, ascorbic acid, caramel, anthocyanins to improve appearance.
