Potassium sorbate is the potassium salt of sorbic acid. It is a white salt that is very soluble in water (58.2% at 20 °C). First discovered in the mountain ash tree, potassium sorbate is a polyunsaturated fat. It is mainly used as a food preservative and is produced synthetically. When function as a preservative, it can break down into water and carbon dioxide in your body. It helps to prevent mold, fungi and yeast growth that can cause foods to spoil. It is quite easy to manufacture potassium sorbate, a combining potassium hydroxide and sorbic acid will cause a reaction that will create water and potassium hydroxide as the molecules bond. Then the water can be strained off to create a solid form of the chemical, or the potassium sorbate can remain dissolved in the water for liquid applications of the preservative.


Uses of Potassium Sorbate

Potassium sorbate is highly soluable and can be used at a wide range of PH levels which makes it an ideal food additive for a number of products without worry that it will break down. It is safe because it contains no additional odors or flavors that would disrupt the eating experience when added to foods. Potassium sorbate is found in many food products, especially those which are meant to be stored and eaten at room temperature. Because it is a good preservative that has anti-microbial properties to stop the growth and spread of harmful bacteria and molds. It can be found in a number of food products, such as baked goods, syrups, jams, cheese, processed fruits and vegetables, and dairy products.

Another important use of potassium sorbate is as wine stabilizer. When it is added to wine, sorbic acid is produced by potassium sorbate.
