Preservative is added to foods to prevent decomposition by microbial growth or by undesirable chemical changes. Most preservatives today are actually fungistatic in their action. They have little effect on bacteria but using a combination of preservatives, with antibacterial properties, can give good all round protection. The primary reason for using food preservatives is to make foods safer by eliminating the influence of biological factors. To achieve this goal, anti-microbial substances are used which inhibit, delay or prevent the growth and proliferation of bacteria, yeasts and moulds. For example, sulphites (E221-228) are used to inhibit the growth of bacteria in wine, dried fruits, or brine; sorbic acid (E200) can be used for preservation of potato products, cheese and jam; nitrite and nitrite compounds (E249-252) are used in meat products to prevent the botulism to secure food safety; benzoic acid and its calcium, sodium or potassium salts (E210-213) are used as antibacterials and antifungals in pickled cucumbers, low sugar jams and jellies, dressings, and condiments.
